You, as the BRILLIANT Sous Chef will manage of all aspects of a specific kitchen operation, including provision planning, staffing, and scheduling, training, and shift execution. You will also exude pride in culinary excellence, demonstrate food skills, and be capable of sound, profitable management techniques. As a leader, you are able to coach and develop Culinarians in a fast-paced environment and possess excellent organization skills, culinary skills, communication skills, time management skills, an eye for detail and a strong commitment to total guest satisfaction.

  • Role:               Sous Chef
  • Cruise line:    International Cruise liner
  • Salary:            $2700-$3400 USD per month Tax free – paid whilst on board only
  • Rotation:        6.5 months on and 2 months off
  • Berthing:        Shared Cabin
  • Flights arranged and paid by the cruise line
  • Food, accommodation and uniform all provided onboard by the cruise line

Responsibilities:

  • Ensures the operation of the kitchen unit under the direction of the Chef de Cuisine/Executive Sous Chef.
  • Produces reports and action plans for the Chef de Cuisine to utilize in operations.
  • Ensures profitability of the kitchen unit operation.
  • Ensures recipe procedures and execution standards are being met.
  • Train new culinarians on current and new procedures.
  • Ensures proper safety and sanitation in kitchen.
  • Ensures proper equipment operation/maintenance.
  • Maintain and review all current recipes and procedures.
  • Purchasing/Inventory control.
  • Ensure proper storage of all supplies.
  • Search for improvements and efficiencies.

 

Requirements:

  • Strong supervisory, leadership, hands-on management and coaching skills
  • High Volume Hotel, Restaurant or Ship Experience.
  • Good communication skills both written and verbal.
  • Ability to communicate on various levels to include management, departmental, customer and crew members levels.
  • Demonstrated proficient culinary skills. Certification preferred.
  • Strong financial, budgetary, and food control practices.
  • Proficient computer skills to include; various computer programs, Microsoft Office programs, e-mail and the Internet.
  • Ability to multi-task as well as stay on task and concentrate with constant interruptions.
  • Knowledge of safe and sanitary food handling principles. USPH experience helpful.
